4 people
Ingredients
1.5l of water
500 g of fresh ginger
500g sugar
2 limes
1/2 bunch of mint
(You can add pineapple juice to this preparation)
(Always adjust the amounts of sugar according to your taste and diet – feel free to substitute with healthier alternatives, such as agave syrup)
Instructions
- Peel the ginger, cut it into chunks and put them in a blender. Pour in a little water and mix everything together until you get a smooth paste.
- Put the water in a container. Add the ginger paste and mix.
- Cut the lemon into quarters (with the skin on) and add them to the water and ginger mixture. Leave to macerate for 30 minutes.
- Filter the juice using a strainer. Add the sugar gradually, while tasting, until you achieve the flavor you want.
- Add the mint leaves and chill in the fridge, it’s ready! Mix well before serving, as the ginger will sit at the bottom of the drink.
Ginger juice can be kept for up to 5 days in the refrigerator.
